A Few Of My Favourite Things: Steamed Fish 'Paek Sak'

This is a simple homely dish of steamed fish, made deligthfully tart with the the addition of tamarind apple slices, pickled garlic and pickled galangal, along with the more standard Thai ingredients - bird's eye chillies, shallots, lemongrass and tomatoes.

All the ingredients work well to create a sweet and tart flavour with a silky gelatinous finish; the fish gelatine brought to the fore.

Unffffff. This is what it feels like.
